These Days Soave Gets Some Respect

SOAVE, ITALY — Every era has its default white wine, a drink so bland that nobody notices it and so cheap that no one cares. The current default white is pinot grigio, the accompaniment to pasta bakes, company outings and karaoke nights the world over. Previously, New World sauvignon blanc and chardonnay had their turns. In the 1960s there was Liebfraumilch.
For a few years in the 1970s and ’80s, the default white was Soave. If you lived in the United States at the time, you surely remember the television advertisements that helped this wine, which comes from the Veneto region of northern Italy, earn default status. If not, well, they are YouTube classics.
Against a backdrop of “Godfather”-style weddings and Eurotrash resorts, one of the main Soave producers, Bolla, uncorked vintage tag lines like, “You can always trust the taste of a Bolla,” and, “There are almost as many people in love with Soave Bolla as there are people in love.”
Clearly, this wasn’t going to last. After a few years, U.S. consumers, probably not unlike the yachtsmen who were featured in the ads, developed commitment issues. Soave’s fate was well and truly sealed in 1990, when a cheesy rapper named Gerardo released the single “Rico Suave.” Yes, the spelling was slightly different, but like Gerardo himself, it was too close for comfort.
At home in Italy, at least, Soave mostly kept its good name. Now, at long last, it seems to be on the rebound in export markets, too.
This time, a handful of small producers are leading the way, focusing on quality, not marketing, in the hope of securing a longer-term relationship with wine drinkers.
Unlike pinot grigio, a grape that is grown widely across northeast Italy, Soave is a vineyard region, not a variety. It surrounds a pretty town of the same name that lies about 20 kilometers, or 12 miles, east of Verona. Soave is made mostly from garganega, an indigenous variety that is sometimes supplemented with small amounts of trebbiano di Soave, chardonnay and a handful of other varieties.
Let’s not be too hard on pinot grigio; there are excellent examples of wines made from this grape, too, often under its French or Germanic versions, pinot gris and grauburgunder, respectively. But pinot grigio is usually a simple wine — a fruity, easy-pleasing aperitif — while Soave, at its best, is dry, verging on complex and excellent with food.
Confusingly, Soave comes with several quality designations, including ordinary Soave, as well as wines labeled as Classico or Superiore. The former refers to wine grown in hillside vineyards, which have more potential than the flatlands used for ordinary Soave. The latter overlaps somewhat with Classico, but also specifies certain winemaking practices that are aimed at lifting the quality — or, perhaps more to the point, the price.
Lying mostly within the Classico zone is a special factor that separates Soave from the great mass of other whites produced in northeastern Italy, as well as elevating many of the Classico and Superiore wines above most ordinary Soave: a band of ancient volcanic soil.
The gentle hills of Soave, rising slowly from the plain of the Adige River to the foothills of the Dolomites, hardly look like the Italian volcanoes of the imagination — funnel-shaped peaks like Vesuvius or Etna. Still, on a walk through the vineyards here, above the crenellated walls of the medieval castle, you can see where chalk, clay or alluvial soils yield to dark, volcanic basalt and tufa.
The Soave growers attribute several benefits to this terroir. It stores heat, helping the grapes ripen. It wards off illnesses and pests. And it confers on the wines a salty, smoky, bitter quality that makes a nice complement to the almond and citrus flavors that are typically found in garganega.
How much of this is due to the volcanic soil? When I got home from Italy I conducted an informal experiment, opening two bottles of Soave Classico from Pieropan, perhaps the best Soave producer. One, called Calvarino, was from a volcanic vineyard; the other, La Rocca, was not.
To make things more interesting, and less scientific, I added two bottles from a very different place, Alsace, and a very different variety, Riesling. Each was from the same producer, Martin Schaetzel. One was from a volcanic vineyard called Rangen de Thann, the other from a nonvolcanic terroir called Schlossberg.
