Saussignac
13 AOC – Appellations d’Origine Contrôlée – with which to Titillate the Taste Buds
Sometimes it is enough simply to roll the powerfully evocative and tantalising names of certain appellations around one’s mouth, for the palate to respond with a shiver.
What pleasure in itself to greedily recite names redolent of promises of flavour and freshness, of generosity and fullness.
Saussignac
Saussignac AOC white wine is made from an assemblage of Sémillon, Sauvignon, Muscadelle, Ondec and Chenin Blanc. It is a rich, full wine whose aroma of acacia, peach and honeysuckle develops over time into a generous, complex bouquet. The harvest of partially raisined, or dried and shrivelled, grapes gives this wine its sweetness. Saussignac AOC wines can apply for the ‘liquoreux’ (complex, rich sweet wines) denomination if the grapes have been allowed to develop Noble Rot instead of drying on the vines (as can Haut Montravel AOC wines).
