Dessert wines from Sauternes can be quite decadent. However they are never cloying in the palate. That’s because of the sharp acidity imbued into the wine which balances well against the sweetness giving the wine much needed vigor despite its richness. The undertone of botrytis underneath the sweetness gives the wine its backbone and that holds everything together throughout the long ageing process to reach full maturity.
