Opening its doors and the kitchen for guests and food hunters yesterday, a sampling of the late Evelyn Manaloto-Santos’ heirloom recipes like its house specialties Rellenong Bangus, Chopsuey, Beef Stroganoff, Pancit Canton and Wanton Soup, preceded by a super appetizer of spiced, crispy catfish topped on an “out of this world” concoction of flavored herbs, were on the buffet for everyone to feast.
“Plato Mama is all about immortalizing the homegrown recipes of our mom Evelyn. This restaurant, which is my dad Sonny’s retirement dream after working many years in the Middle East, is dedicated to her and the always delicious home-cooked meals and recipes she handed down to us, and which we now would like to share to Kapampangan food lovers,” said the matriarch’s daughter Patricia Fae, who acts as the resto’s general manager.
Behind the savory dishes and in charge of the kitchen is Patricia’s sister Master Chef Frances, who noted that her mom’s legacy—now in the spirit of Plato Mama—is the family’s is pride even as it their first venture into the food business.
“But it is not only about money. It is about the highest quality of food, the ingredients, the passion and love that goes into each recipe. The Plato Mama menu, which honestly is not of the common commercial kind, embraces a home-cooked culinary style by highlighting the meats, fish and native herbs and spices characteristic of the countryside. Plato Mama is unforgettable and the experience begins as soon as you enter the restaurant with its native nipa hut ambience with the aroma of fresh herbs wafting from the kitchen,” shared Chef Frances.
Looking forward to expanding the Plato Mama menu, she adds that steaks will be perfect complements to its special pinakbet, crispy pata, kare-kare, fried chicken, grilled pork belly and catfish often finished off with strawberry shake, halo-halo or the home style pastries straight out from the Plato Mama ovens.
“Entrees in our menu are so affordable one can enjoy our meals starting at just P99, and that’s from 11:00 am to 1:00 am daily, with no hassles on parking but rather savvy service from our crew,” quipped the chef.
