The 2012 Hirsch Riesling is one of the many selections of fine vintage wines from Burgundy that are now available at Clark Wine Center and other wine outlets of Yats Wine Cellars in Manila.
Climate and Viticulture: Germany, being located in the northernmost limits if the viticulture region suffers from too cold a climate. This causes several problems, foremost of which are underripeness and frosts. This can only be remedied by planting high on very steep slopes that catch the rays of the sun as it rises and sets. The steepness of the slopes however, makes it impossible for mechanical harvesting of wines and in turn, the grapes can only be harvested by hand. This contributes greatly to the higher prices of these wines. The soils in the best vineyards are made off pebbles and stone that reflect heat during night time to promote ripeness even during night time. Nahe, one of the premier regions of Germany has South East-facing vineyards that maximize the sunlight during sunrise.
Tasting notes: Mouth-watering acidity gives this wine a refreshing attitude that goes well with salty, rich, and sour dishes. It has an aromatic earthy profile that could be referred to as Petrolly or oily by some tasters. On the palate, it has a lime juice acidity that is balanced by some residual sugar. It would pair well with salty dishes such as cheeses and smoked salmon. It can also pair well with spicy Asian foods and sushi.
