Gavi wine had been called by Carlo Petrini, SlowFood President, “the great Piedmont’s white”. More than 70% is sold abroad, and some of the best connoisseurs of Gavi are American, British or German. Gavi is produced in South Eastern Piedmont, 40 km far from Genoa and its seashore. It can be only produced in 11 villages (Gavi, Novi Ligure, Tassarolo, Bosio, Carrosio, Francavilla Bisio, Pasturana, Parodi Ligure, Capriata d’Orba, San Cristoforo and Serravalle Scrivia) and no more than 1200 hectares vineyards. This is a very nice part of Piedmont, with splendid vineyards, woods, fields and many castles, villas and wineries.
Cortese grape had been first cultivated to make Gavi dry with wine by Genoese Marquis Luigi Cambiaso in 1856. Gavi Consortium controls the whole production, almost 10 millions bottles. The Consortium gathers more than 80 wineries.
Elegance and freshness are the best characteristics of Gavi docg, thanks to a good acidity, typical of Cortese grape. Gavi is suitable and drinkable, as an aperitif or to match with antipasti (appetizers and starters) or seafood and fish, and also with goat cheese. At least, the modern long ageing Gavis have good structure besides intense mineral perfumes, large aromas and persistent taste: the best friend of delicate and elegant food, which is never overcome as sometime happens because of too much aromatic and powerful white wines. Gavi gets better by ageing. Perfect when young, flower scenting and fresh, after some more years reaches large mineral aromas and it is richer in taste, so as all the great world famous white wines should be. Be patient, if you can.
