To Decant, or Not?
PARIS–Eric Asimov’s latest column in The New York Times on decanting wine reminds me that my own decanters see very little use – other than when they’re used to water the plants.
I have three decanters, two for table wines and one, with a stopper, for port. This is what happens when you neglect to sign up for a wedding gift registry.
All three are beautiful pieces of glassware, and I probably ought to use them more often for their intended purpose. Yet I find that the occasions for decanting wine, at least in my household, are few and far between.
One reason is that, sadly, I do not open an old, rare wine, the kind that throws off a considerable amount of sediment and demands decanting, every night. As Eric writes, this is one of the two main reasons for decanting.
The other, more debatable, reason is to aerate the wine. On this, I am somewhat more skeptical.
Yes, I see the benefits of aeration, especially for tannic, closed young reds. These wines almost always taste better after they have been exposed to some air. Yet I find that simply opening the bottle a few hours in advance, or serving the wine in a generously sized glass and giving it a vigorous swirl, often does the job. The second or third glass almost always tastes better than the first, though this may not be entirely because of the air.
I suspect, given that I live in Paris, some of the French attitude toward decanting has rubbed off on me, too. In my experience the French, outside the great temples of gastronomy, tend to attach less ceremony to the service of wine than, say, Americans, Britons or Germans do. Some of this probably reflects a tradition of treating wine as an everyday accompaniment to food.
O.K., there may be an element of sloppiness, too. I’m often puzzled by the poor quality of glassware, generally, in many restaurants in France. Many of the best wine glasses are made by Austrians (Riedel) or Germans (Spiegelau) and restaurants in those countries, and elsewhere, tend to make use of them. The French are often happy to pour their grands crus into sad, industrially made glasses.
I’ve also come across quite a few French vignerons – especially in Burgundy and the Rhône Valley — who are vehemently opposed to decanting, saying it actually hurts the taste of their wines. The fruit in red Burgundy can be very delicate; the violent act of decanting (I’m paraphrasing the French here) destroys it.
There may be something to this. Few wines are more delicious than a red Burgundy, straight from the bottle, tasted in a vigneron’s cellar.
How’s that for excuses for the lack of use of two of my three decanters? The third one, on the other hand, really ought to be filled up with some vintage port.
